Description

This sweet corn cake is spiked with desiccated coconut to provide a sweet, rich, and tasty treat.

  1. Beat together butter and sugar.
  2. Add eggs, one egg at a time.
  3. Add vanilla essence.
  4. Add sweetcorn, mix and then add the dry ingredients and mix well.
  5. Pour into a prepared baking tray.
  6. Bake at 180C / 350F degrees for 30 minutes.

Are polenta and semolina the same thing?

Semolina is wheat, polenta is corn. ‘Polenta’ may also refer to the grain or the dish that results from using polenta. There are occasions where you can substitute one for the other, but not all the time. Semolina is high in protein and fiber and low GI, so it’s good for you!

    1. Hi Vicki, thank you for checking in. To answer your questions: As for the size of the dish, it will depend on how thick you wish to make the cake. Unfortunately the lady that provided us with the recipe did not mention the size, but my suggestion would be to try a 9×9 or even better, once you prepared the batter you will be able to see which will work best. As for the ingredients, the recipe mention to use: 200 g butter and 1/2 cup self-raising flour. Hope this will help.

      1. Sorry, my question wasn’t clear re: butter/flour. I wondered if you prepare the baking dish by greasing with only butter or buttered and floured. Thanks.

        1. Hi Vicki. No worries, You will not go wrong if you use both. Should you use the flour as well, only use a light dusting and toss the rest by tipping your dish to discard the excess. Hope you will enjoy it, and please come and tell us how it turned out
