Yahoo. A vegan recipe I’m sure I’d enjoy. Love that this salad has no lettuce. A few times in the last few weeks I’ve run out of lettuce so didn’t make a salad. Now I have a creative way to have a crunchy salad without that item. Ingredients are healthy and make me happy. Thanks esme for hosting

Hi Nancy, I have lots of vegan recipes and to be honest, I seldom use lettuce in salad, if I do want a green, I will use baby spinach leaves. Hope you will enjoy this one.
