Description

Dinner got a lot more exciting with this Baked Chutney and Mayonnaise Chicken!


Ingredients

Units Scale
  • 810 pieces of chicken (I used 12 drumsticks)
  • 1 sachet of brown onion soup powder
  • 250 ml warm water (NOT boiling water)
  • 1/2 cup mayonnaise
  • 1/4 cup chutney
  • 1/4 cup sweet chili sauce
  • 1/4 cup tomato sauce/ketchup
  • A dash of Salt to taste

Instructions

  1. Place all chicken pieces in an oven dish and lightly salt it.
  2. Mix the onion soup powder with the hot water, and add the mayonnaise, chutney, chili sauce, and tomato sauce in a large bowl.
  3. Pour it over the chicken pieces, cover with tinfoil, and bake for 50–60 minutes.
  4. Remove the foil and continue to bake/broil until nicely golden brown.
  5. I turned up the temperature to 450F/230C for browning.
  6. I served it with a fresh green salad and Air-fried (originally frozen) potato fries.
