Bang bang chicken (Chinese: 棒棒雞; pinyin: bàng bàng jī; lit. ‘bang-bang chicken’), also known by variant names such as bam bam chicken or bon bon chicken, is a popular chicken dish in Chinese cuisine. The name bang bang chicken is derived from the Chinese word for stick, bàng (棒), referring to the baton or cudgel traditionally used to tenderize the meat.

Ingredients
- 1.5 pounds chicken breast skinless, boneless, and cut into 1-inch pieces
- 1/2 cup buttermilk
- 3/4 cup Panko breadcrumbs
- 1/4 cup + 2 tablespoons all-purpose flour
- 1/4 cup + 2 tablespoons cornstarch
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- Vegetable or sunflower oil
Sauce
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1 teaspoon sriracha sauce (or hot sauce of choice – I used Chinese chili sauce and Tabasco)
Instructions
- In a medium bowl, add the diced chicken and buttermilk.
- In a separate medium bowl, add the Panko, all-purpose flour, cornstarch, garlic powder, onion powder, paprika, and salt. (I added 1/2 tsp chicken spice as well)
- Drain chicken, place each chicken piece in the breading mixture, and toss to coat.
- Heat sunflower oil, vegetable oil, or any neutral flavor oil in a non-stick or cast iron skillet to deep fry.
- Add the breaded chicken and cook for approximately 2 minutes on each side until crispy.
- Place the cooked chicken on a plate lined with paper towels to absorb the excess oil.
- Serve the chicken with rice and the bang bang sauce drizzled over top.
- Garnish with sliced spring onions.
- Mix sauce well and add the sauce right before eating so the chicken stays crispy.

I’ve been wanting to try this Bang Bang Chicken for quite a while. I eventually did. The Westernized version, is breaded and fried. Recently in my mailbox Nagi from Tin Eats said the original classical version is poached, shredded, and served with cucumber! I’ll let you know when I try that version. But for now, I loved this one.
