Description

For Regular Fudge:

  • 6 Tbsp real butter
  • 3 1/2 cups icing sugar (powdered sugar)
  • 1/2 cup cocoa powder, sifted
  • 1/2 tsp peppermint extract
  • 1/4 cup full-fat milk
  • 2 peppermint candy canes

For Vegan Fudge:

  • 6 Tbsp vegan margarine
  • 3 1/2 cups icing sugar (powdered sugar)
  • 1/2 cup cocoa powder, sifted
  • 1/2 tsp peppermint extract
  • 1/4 cup soy milk
  • 2 peppermint candy canes

Instructions

  1. Line a loaf pan with parchment paper or grease it with margarine.
  2. Place the candy canes in a sandwich bag and crush them, use a rolling pin, meat mallet, or anything heavy.
  3. In a heatproof bowl (or the top of a double boiler), combine the butter or margarine, icing sugar, cocoa, peppermint extract, and milk or soy milk.
  4. Set the bowl over a pot of simmering water.
  5. Stir slowly until it melts into a smooth, thick fudge.
  6. If it’s too stiff, add a splash more milk.
  7. Pour the mixture into your prepared pan and smooth it out quickly.
  8. Sprinkle the crushed candy canes on top and press them in gently so they stick.
  9. Chill in the fridge until firm.
  10. Slice into squares or bars and keep chilled until ready to serve.
