A burrito is a dish in Mexican and Tex-Mex cuisine that took form in California cuisine, consisting of a flour tortilla wrapped into a sealed cylindrical shape around various ingredients. The tortilla is sometimes lightly grilled or steamed to soften it, make it more pliable, and allow it to adhere to itself.

Ingredients

  • 300g Minced Beef
  • 1 Tablespoon Taco Seasoning
  • 1 Can Black Beans (drained)
  • 23 Tablespoons Sour Cream
  • Lettuce (chopped)
  • Guacamole
  • Pico de Gallo
  • Sliced Jalapeños
  • 1 Head Cauliflower
  • Oil
  • Salt to taste

Instructions

  1. Trim the cauliflower florets, cutting off as much stem as possible.
  2. Place in a food processor and blitz till it resembles fine crumbs or chopped
    finely.
  3. Heat oil in a large pan, add in the cauliflower, season, and stir frequently until softened.
  4. Brown the meat in batches then sprinkle in the taco seasoning, and return all the meat to the pan, add in the black beans, and cook for a few minutes.
  5. Spoon a layer of rice and then add the toppings.
  6. Enjoy!!
