Description

This one’s my go-to when I want something chocolatey but still feel like I’m making a “good choice.” It’s creamy, a little rich, and tastes better the next day.  You can adapt as you go along; it’s very versatile.


Ingredients

Units Scale
  • 3 tbsp chia seeds
  • 1 cup unsweetened almond milk
  • 1 tbsp unsweetened cocoa powder
  • 1 tbsp natural peanut butter or almond butter
  • 12 tsp maple syrup or 10 drops liquid stevia or sweetener to taste
  • 1/2 medium plum, sliced (for decoration)

Instructions

  1. In a jar or small bowl, add 3 tbsp chia seeds and 1 cup unsweetened almond milk. Give it a quick stir right away so the seeds don’t clump at the bottom.
  2. Add 1 tbsp unsweetened cocoa powder and 1 tbsp natural peanut or any other nut butter.
  3. This can get a bit lumpy, so I usually grab a handheld mixer or whisk and blend until smooth.
  4. Add 1-2 tsp maple syrup or 10 drops liquid stevia or sweetener to taste.
  5. Stir again and taste. You might want a bit more depending on how bitter your cocoa is.
  6. Let it sit for about 5 minutes, then stir again. This second stir really helps prevent clumping later.
  7. Cover and refrigerate overnight, or at least 4 hours if you’re in a rush.
  8. Before serving, give it a good stir. If it’s too thick, splash in a little extra almond milk and mix until creamy.
  9. Add slices of plum or any other fruit as decoration and extra sweetness, as desired.
