COCONUT FLOUR AND FLAX SCONES are made with coconut flour and flaxseeds.
Low carb, gluten-free scones with sugar-free berry jam and cheddar cheese👌
Ingredients:
2 tblspns coconut flour
4 Tblspn blonde flax seeds (or flax meal / flax powder)
1 tsp xylitol or sweetener of choice to taste
2 eggs
1 Tblsp butter
1 tsp baking powder
1/4 tsp baking soda
A crack of sea salt
1/2 cup milk

Method:
Combine all the ingredients in a food processor and whizz until smooth.
Grease your muffin tin/ramekin.
Pour the batter into the dish.
Bake at 200C for about 15 mins or until a toothpick inserted in the center comes out clean.
Makes 4-5 medium-sized scones.
