Coconut Flour and Flax Scones

Low carb, gluten-free scones with sugar-free berry jam and cheddar cheese. The scones are made with coconut flour and flaxseeds.
Ingredients
- 2 tblspns coconut flour
- 4 Tblspn blonde flax seeds (or flax meal / flax powder)
- 1 tsp xylitol or sweetener of choice to taste
- 2 eggs
- 1 Tblsp butter
- 1 tsp baking powder
- ¼ tsp baking soda
- A crack of sea salt
- ½ cup milk
Instructions
Combine all the ingredients in a food processor and whizz until smooth.
Grease your muffin tin/ramekin.
Pour the batter into the dish.
Bake at 200C for about 15 mins or until a toothpick inserted in the center
comes out clean.
Makes 4-5 medium-sized scones.
