Description

These Colourful Fluffy Rainbow Waffles are soft, lightly sweet, and just a little playful. They’re the kind of breakfast that makes people smile before they even take a bite.


Ingredients

  • 2 cups Self-Raising flour
  • 1/3 cup sugar
  • 1 egg, beaten
  • 1 tsp vanilla extract
  • 1 cup milk (approx.)
  • Assorted food colouring
  • Butter or oil for greasing the waffle iron

Instructions

  1. In a large bowl, whisk together 2 cups Self-Raising flour and 1/3 cup sugar.
  2. Add 1 beaten egg and 1 tsp vanilla extract, then pour in about 1 cup milk, whisking until you get a smooth, pourable batter.
  3. Divide the batter evenly into separate bowls, depending on how many colours you want.
  4. Add a few drops of food colouring to each bowl and gently mix until the colours are vibrant.
  5. Preheat your waffle iron as per directions and lightly grease it with butter or oil so nothing sticks.
  6. Spoon small amounts of each coloured batter into the waffle iron.
  7. Close the lid and cook for 3 to 5 minutes, or until the waffles are cooked through and lightly crisp on the outside.
  8. Carefully remove and let them sit for a minute before serving.
  9. Serve warm with syrup, fruit, or even a little whipped cream if you’re feeling extra.
