Description
Sometimes you just want a quick little dessert without turning the whole kitchen upside down. This Creamy Cocowhip Pudding comes together in minutes and chills into a light, fluffy treat that feels a bit fancy for almost no effort.
Ingredients
- 64 g fat-free white chocolate Jello pudding mix
- 300 g So Delicious Cocowhip (or Cool Whip Whipped Topping)
- 475 ml Earth’s Own oat milk, cold (or regular milk)
Optional garnish
- Fresh blueberries, grapes, or any other fruit of your choice
- Slivered almonds and mini chocolate chips
Instructions
- In a medium mixing bowl, whisk together 475 ml cold Earth’s Own oat milk and (2 boxes) 64 g fat-free white chocolate Jello pudding mix for about 1 to 2 minutes, until the mixture starts to thicken and is smooth.
- Let the pudding mixture sit for about 2 minutes to thicken.
- Add 300 g So Delicious Cocowhip to the bowl.
- Using a rubber spatula, gently fold the Cocowhip into the pudding mixture until everything is light, creamy, and fully combined. Do not overmix.
- Spoon the pudding into small dessert bowls or glasses, or if you prefer, one large container, then refrigerate for at least 30 minutes so it sets nicely.
-
You can also leave it overnight for an even thicker consistency.
-
Right before serving, garnish with fresh blueberries, grapes, slivered almonds and mini chocolate chips.
Feel free to use regular milk and whip; I used what I had available in the fridge. The fat-free white chocolate Jello pudding mix is not Vegan, as I did not have a vegan mix on hand. This was an experiment, and it worked. Hubby is mightily impressed.
