Pudding made with coconut milk, and this little Creamy Vegan Chocolate Pudding is totally and completely vegan, yes I kid you not!
- 1 tin full fat coconut milk
- 1/2 cup cocoa powder
- 1/3 cup maple syrup
- pinch of salt
- 15ml vanilla extract
Add coconut milk and maple syrup to a medium saucepan.
Sift in cocoa powder and whisk the mixture together until it is combined.
Add in a pinch of salt and vanilla extract and whisk.
Bring this mixture to a boil over medium heat.
Once it comes to a boil, turn it down and allow the mixture to simmer for approximately 15 minutes while whisking frequently.
The mixture is going to begin to thicken.
Remove the saucepan from the heat and allow the pudding to cool at room temperature, whisking occasionally.
Once it has cooled down significantly, place it in the refrigerator.
Allow it to chill completely before serving, preferably overnight if you have the time, as it can take a few hours.
Serve chilled and decorate with fresh berries
