Description

These little cookies are easy to make and full of buttery flavor. They make perfect homemade gifts or a cozy tea time snack.

Instructions

  1. Grab a large bowl and beat 180g butter and 1 tsp vanilla essence with 1/3 cup icing sugar until it’s smooth and creamy. Don’t worry if it looks a bit soft; that’s perfect.
  2. In a separate bowl, sift together 1 cup self-raising flour, 1/2 cup plain flour, and 1/2 cup custard powder. Make sure it’s all light and airy.
  3. Stir the dry mixture into the butter-sugar mix.
  4. Bring it together with your hands if it helps, until it forms a soft dough. It should be slightly crumbly but hold together when pressed.
  5. Roll small balls of dough (about 1 tablespoon each) and place them on a greased or lined baking tray.
  6. Press each lightly with a fork; don’t flatten too much, or they’ll lose that shortbread texture.
  7. Bake in a preheated oven at 160°C for 15 minutes.
  8. Keep an eye on them; they should be lightly golden at the edges, not deep brown.
  9. Let the cookies cool completely on the tray before handling, as they are very soft and will fall apart.
  10. You can leave them as singles or sandwich two together with your favorite filling.
