Ingredients
- 1 1/2 cups flour
- 1/2 tsp baking soda
- Pinch of salt
- 1 cup chopped pecans
- 3/4 cup chopped prunes
- 3/4 cup chopped dried apricots
- 1/2 cup dark raisins
- 1/2 cup margarine
- 1 cup packed brown sugar
- 1 large egg
- 1/2 cup corn syrup
Instructions
- Mix the flour, baking soda, and salt in a bowl.
- Put all the chopped dried fruits in another bowl.
- Sprinkle 2 tablespoons of the flour mixture over the fruit and toss to coat.
- Beat the margarine, brown sugar, and egg with an electric mixer for about 2 minutes until creamy.
- Add the corn syrup and mix well.
- Stir in the rest of the dry ingredients, then fold in the fruit and pecans.
- Pour the batter into a lightly greased 13″ x 9″ pan.
- Bake at 350°F (175°C) for ± 30 minutes, or until golden.
