Easy Double Chocolate Chip Zucchini Bread.
I find that this is a great way to trick the kids into consuming extra vegetables, my kids were none the wiser
Double Chocolate Chip Zucchini Bread

Ingredients
- 1¼ Cup Flour
- ½ Teaspoon Baking Soda
- 2 Teaspoon Baking Powder
- ½ Teaspoon Salt
- ¼ Cup Unsweetened Cocoa Powder
- 1 Teaspoon Vanilla Extract
- ½ Cup Vegetable Oil
- ½ Cup Sugar/ Honey/ Erythritol
- 1 Cup Zucchini (grated & drained)
- ½ Cup Sour Cream
- ½ Cup Semi Sweet Chocolate Chips
- 2 Eggs
Instructions
Extra Chocolate Chips (for the top).
Whisk the eggs, add in the oil, zucchini, sour cream, sugar, and vanilla.
Sift in all the dry ingredients and mix well.
Add in the chocolate chips and mix gently.
Pour the mixture into a greased loaf pan.
Sprinkle the chocolate chips over the top.
Bake at 180C / 350F for 50-55 minutes.
Allow it to cool completely before slicing.
Serve and enjoy!!
