Ingredients
- 1 1/4 cup Flour
- 1/2 Teaspoon Baking Soda
- 2 Teaspoon Baking Powder
- 1/2 Teaspoon Salt
- 1/4 cup Unsweetened Cocoa Powder
- 1 Teaspoon Vanilla Extract
- 1/2 cup Vegetable Oil
- 1/2 cup Sugar/ Honey/ Erythritol
- 1 cup Zucchini (grated & drained)
- 1/2 cup Sour Cream
- 1/2 cup Semi Sweet Chocolate Chips
- 2 Eggs
Instructions
- Extra Chocolate Chips (for the top).
- Whisk the eggs, add in the oil, zucchini, sour cream, sugar, and vanilla.
- Sift in all the dry ingredients and mix well.
- Add in the chocolate chips and mix gently.
- Pour the mixture into a greased loaf pan.
- Sprinkle the chocolate chips over the top.
- Bake at 180C / 350F for 50-55 minutes.
- Allow it to cool completely before slicing.
- Serve and enjoy!!
