Garlic Crayfish Salad

Description

What an outstanding, wonderful, and awesome Salad to prepare for your friends and family.  They will love each bite.


Ingredients

Units Scale
  • 10 Crayfish tails
  • 1 butternut and sweet potato cut into cubes
  • 1/2 head Cauliflower cut into florets
  • 20 ml olive oil
  • salt and black pepper to season
  • 2 teaspoons honey
  • 200g rocket, Baby butter lettuce, and Basil leaves
  • 1/4 cup mixed Walnuts
  • 1/4 cup Turkish dried Apricots

Instructions

  1. Simply arrange the butternut, sweet potato, and cauliflower in an oven pan and drizzle with olive oil.
  2. Season with salt and pepper and roast in the oven until soft.
  3. Drizzle with raw honey and roast for another 5 minutes, ensuring a good roast coloring throughout the pieces of veggies.
  4. In the meantime stir fry 10 crayfish tails, cut lengthwise, and deveined.
  5. Spice with peri-peri, Ina Paarman fish spice, and Fisherman’s spice seasoning.
  6. Add butter to the pan and 2 cloves garlic.
  7. Stir-fry until pinkish and succulent.
  8. Arrange rocket leaves, baby butter lettuce, and basil leaves on a platter
  9. Add the roasted butternut, sweet potato, cauliflower, walnuts, and Turkish dried apricot.
