Chewy GF Oatmeal Pomegranate Craisin Cookies

These GF Oatmeal Pomegranate Craisin Cookies are soft, chewy, and super easy to make.

Ingredients

  • 1½ Cups Gluten-Free Rolled Oats
  • 1 Cup Gluten-Free Almond Flour
  • ½ Cup Arrowroot Starch
  • 2 Tsp Baking Powder
  • ½ Cup Pomegranate craisins
  • ⅓ Cup Stevia
  • 1 Tsp Cinnamon
  • ½ Tsp Caramel essence
  • 1 Cup Unsweetened Applesauce

Method:

  1. Preheat the oven to 375°F.
  2. In a large mixing bowl, combine all the ingredients, adding the applesauce last, and mixing until you have a thick batter.
  3. On a baking sheet lined with parchment paper, place 1 ice-cream scoop of dough and evenly space out, ± 12 cookies
  4. Place in fridge while the oven heats up, for ±10 minutes.
  5. Bake in the oven for approximately 20 minutes. Remove and let cool.
