Ingredients

Units Scale
  • 250g butter
  • 1/2 tsp almond essence
  • 1/2 cup icing sugar sifted
  • 1/2 cup cornflour
  • About 2 1/4 cups of all-purpose flour
  • 1/2 cup coarsely crushed almonds
  • 1/2 cup caster sugar for dredging (also known as Castor sugar)
  • 1/4 cup roasted walnuts
  • 1/2 teaspoon chicory and coffee essence

Instructions

  1. Preheat oven 180C / 350F.
  2. Cream butter, icing sugar, and essence add flour and cornflour to make a soft dough.
  3. Add crushed almonds and knead well to incorporate them into the dough.
  4. Take small pieces of dough, roll the length of your palm (about 5-6 cm long), and gently curve the edges inwards.
  5. Bake long enough to turn slightly golden in color, depending on your own oven.
  6. Dredge in caster sugar while warm.

Note: I tweaked it slightly by adding roasted walnuts as well as Chicory and coffee essence
