A perfect coffee time treat
Ingredients:
250g butter
1/2 tsp almond essence
1/2 cup icing sugar sifted
1/2 cup cornflour
About 2 1/4 cups all-purpose flour
1/2 cup coarsely crushed almonds
Caster sugar for dredging (also known as Castor sugar)
Method:
Preheat oven 180C
Cream butter, icing sugar, and essence add flour and cornflour to make a soft dough
Add crushed almonds knead well to incorporate into dough
Take small pieces of dough, roll the length of your palm (about 5-6 cm long)and gently curve the edges inwards
Bake long enough to turn slightly golden in color.
Dredge in caster sugar while warm.
Note: I tweaked it slightly by adding roasted walnuts and Chicory and coffee essence
