Bread pudding is a bread-based dessert popular in many countries’ cuisines. It is made with stale bread and milk or cream, generally containing eggs, a form of fat such as oil, butter, or suet, and, depending on whether the pudding is sweet or savory, a variety of other ingredients.

Food historians trace bread pudding back to Europe in the early 11th and 12th centuries, and it has been popular in England since the 13th century when just about every kitchen had a deep bowl called a pudding basin that was used to collect scraps of stale bread

How can you tell if bread pudding is done?

Bake uncovered for 50 to 60 minutes or until the center of the mixture reaches 160 degrees F when measured with a food thermometer. At this temperature, a metal knife inserted near the center of the pudding comes out clean.

Description

I tend to forget how quick and easy Bread Pudding is to make or I’d make it more often. This is a simple no-fuss one.


Ingredients

Units Scale
  • 6 slices bread
  • Butter
  • Smooth apricot jam
  • 1/2 cup caster sugar
  • 3 eggs
  • 2 egg yolks
  • 1 tsp vanilla extract
  • 1 tbsp. orange zest (optional but yummy)

Instructions

  1. Grease a casserole dish with butter.
  2. Butter the bread and spread with apricot jam.
  3. Cut into triangles and arrange pieces in a casserole dish including up the sides.
  4. Beat eggs, yolks, sugar, milk, vanilla, and orange zest together.
  5. Pour half of it over the bread and allow to steep for about 10 to 15 minutes.
  6. Add half of the 2 egg whites to the remaining mixture beat again and pour over the bread.
  7. Sprinkle with nutmeg (or cinnamon).
  8. Bake in preheated 180C / 350F oven for 30-40 minutes.
  9. Melt 2 tbsp apricot jam in the microwave with tsp water.
  10. Brush over pudding and bake another 5 minutes.
  11. You can add nibbed almonds, and/or coconut.
  12. Serve with custard.
