Easy Vegan Biryani Cooked In a Microwave Oven – How to Make a Vegan Biryani
Ingredients
Vegetables
- 1 potato – cut into 1/2” pieces
- 1/2 of a small cauliflower – cut into florets
- 2 carrots – cut into 1/2” pieces
- 1 cup green peas
- 1 tomato cut into 8 pieces
- 2–3 green chilies – cut into thin strips
- 1 tbsp mint leaves
- 1 tsp lemon juice
Spice Bag
- 10 whole peppercorns
- 2 tsp fennel seeds
- 3–4 green cardamoms
- 3–4 black cardamoms
- 4 cloves
- 2 sticks cinnamon
Biryani
- 1 cup long-grained fragrant rice- washed and soaked
- 5 tbsp oil
- 1 tsp ginger paste
- 1/2 tsp garlic paste
- 1/4 tsp turmeric powder
- 1/2 tsp red chili powder
- 1 1/2 tsp salt or to taste
Instructions
In a broad microwave-proof dish, pour oil, ginger, garlic, cauliflower, potato, carrots, and peas.
Microwave for 4 mins.
Drain the soaked rice.
Add rice, 2 cups of water, turmeric powder, red chili powder, and salt.
Add the spice bag. Microwave covered for 6 mins.
Add tomatoes, mint, coriander, green chilies and lemon juice.
Stir gently with a fork. Cover and microwave for 8-10 mins.
Wait for 5 mins Fluff with a fork and serve.
