Ingredients

Units Scale

Instructions

  1. Whisk egg, almond milk, almond flour, vanilla extract, Stevia Liquid drops, and salt until well combined.
  2. Adjust consistency by pouring more water if necessary.
  3. Mix in the psyllium husk powder. Let the mixture sit for 5-10 min to thicken up. Then, mix in the baking powder.
  4. I added ± 1 tsp extra psyllium husk powder ** for consistency.
  5. Heat olive oil in a nonstick frying pan over medium-low to medium heat.
  6. Use a 25ml spoon, spoon the batter onto the hot pan, and form it into 4 circles.
  7. Cover and cook for about 2 min, until bubbles start to form.
  8. Flip and cook for another 1-2 min, until browned on the other side.
  9. Repeat with the rest of the batter.
  10. Serve the pancakes on a plate with Almond butter. Enjoy.

NOTES: feel free to substitute the suggested sweetener with any other sugar-free sweetener you have, but I used Stevia Liquid drops

    • Hi Maureen. So glad you will try this out and hopefully you will enjoy it as much as I did. Please do come back and let me know how it turned out for you. Thanks for hopping over, I truly appreciate it. Enjoy your pancakes

  1. This is interesting and sound oh so wonderful. I’ve never had almond butter but I’d sure like to try it.
Thanks so very much for sharing this recipe with Sweet Tea & Friends this month dear friend.

  2. I have tried Keto pancakes before and they are a great alternative when following a Low Carb lifestyle, you do not feel as if you are missing out! Love your serving suggestion of Almond butter – the only problem would be stopping at eating just one! Sim x

    • Hi Sim, Thanks for your kind words. Yes I totally agree with at stopping at eating only one. The Keto recipes I try and share you can have everything listed, unless otherwise stated, because I make it only for myself, so will only prepare enough for one meal or treat. I admit these are addictive and I have made them more than once already.

  3. Hi, Esme. How do you find all these wonderful ideas for recipes?
Thank you for sharing at Gma’sPhoto My Sunday Snapshot. Looking forward to seeing you next Sunday!
    Take care and best wishes.

    • Morning Debra. Thanks for your kind words. I am at present on the Keto Cycle and they have 1000’s of recipes to choose from which I try out and most of them (those I share) are awesome but I have also found some I did not like at all. These pancakes are a winner in my books and I have made them more than once already. I love the fact that it’s LC and GF which works for me. I know lots of people are against Keto for different reasons, but it’s working for me. I am not a physician or nutritionist so everyone need to make sure that they can use any of these recipes listed on my blog, not only the Keto but all recipes. Thanks for your kind words.
