Keto Almond Flour Pancakes with Almond Butter

Description
Goodbye, carbs! Hello, Keto Almond Flour Pancakes! Try this recipe and start your day the healthy way.
Ingredients
- 1/5 cup (50 g) Almond Milk, unsweetened
- 2 1/2 tbsp (16 g) Almond Flour
- 1 medium Egg
- 1/4 tsp (1 g) Baking Powder
- 2 drops Vanilla Extract
- 2 drops Stevia Liquid drops
- 1 pinch Salt
- 1 tsp Olive Oil
- 1 tbsp (15 g) Almond Butter
- 2 tsp (2 g) ** Psyllium Husk Powder
Instructions
- Whisk egg, almond milk, almond flour, vanilla extract, Stevia Liquid drops, and salt until well combined.
- Adjust consistency by pouring more water if necessary.
- Mix in the psyllium husk powder. Let the mixture sit for 5-10 min to thicken up. Then, mix in the baking powder.
- I added ± 1 tsp extra psyllium husk powder ** for consistency.
- Heat olive oil in a nonstick frying pan over medium-low to medium heat.
- Use a 25ml spoon, spoon the batter onto the hot pan, and form it into 4 circles.
- Cover and cook for about 2 min, until bubbles start to form.
- Flip and cook for another 1-2 min, until browned on the other side.
- Repeat with the rest of the batter.
- Serve the pancakes on a plate with Almond butter. Enjoy.
NOTES: feel free to substitute the suggested sweetener with any other sugar-free sweetener you have, but I used Stevia Liquid drops

I have tried Keto pancakes before and they are a great alternative when following a Low Carb lifestyle, you do not feel as if you are missing out! Love your serving suggestion of Almond butter – the only problem would be stopping at eating just one! Sim x

The Keto recipes I try and share you can have everything listed, unless otherwise stated, because I make it only for myself, so will only prepare enough for one meal or treat. I am at present on the Keto Cycle and they have 1000’s of recipes to choose from which I try out and most of them (those I share) are awesome but I have also found some I did not like at all. These pancakes are a winner in my books and I have made them more than once already. I love the fact that it’s LC and GF which works for me. I know lots of people are against Keto for different reasons, but it’s working for me.
