Lasagna Stuffed Chicken smothered in cheese sauce
A chicken breast smothered in cheesy, saucy goodness. It is absolutely delicious and another dilemma sorted on what to make with chicken breasts.
I served it with microwaved baked potatoes with copious amounts of butter and the sauce used to make the chicken and some simple fried rice.
Ingredients:
- 2 chicken breasts (I used 4, as they were rather small)
- 1 cup ricotta cheese
- 1 egg
- 3 teaspoons Italian seasoning, divided
- ½ tsp parsley (my addition)
- 2 cloves crushed garlic
- ½ teaspoon salt
- 2 turns of pepper grinder (my addition)
- 2 cups shredded mozzarella, divided
- 1 cup marinara sauce (I used tomato and basil pasta sauce)
- 2 tbsp parmesan cheese (the packet kind – my addition)
- Additional Salt and Pepper, to taste
Method:
- Butterfly chicken breasts and place into a lightly greased baking dish.
- I seasoned both sides first with chicken spice.
- In a small mixing bowl, stir together ricotta cheese, egg, 2 teaspoons of Italian seasoning, parsley, garlic, salt, pepper, parmesan, and 1 cup mozzarella cheese.
- Spoon about ¼ cup of sauce onto one-half of each chicken breast.
- Spread the ricotta mixture on top of the sauce and fold the chicken breasts over to close.
- Drizzle the remaining sauce over the chicken.
- Top with remaining mozzarella cheese.
- Sprinkle with remaining Italian seasoning and season with salt and pepper.
- Bake in a 200-degree oven for 25-30 minutes, until chicken reaches an internal temperature of 165F.

Microwaved Bake Potatoes
Ingredients and Method:
- Prick 4 potatoes with a fork, and place them in a packet.
- Make some holes in the packet, tie, and microwave on high or 20 minutes (5 minutes per potato).
- Cut an X across, squeeze and slather on butter, salt, and pepper and add a topping of your choice.
Fried Rice
Ingredients:
- 2 cups leftover cooked rice
- 1 small packet of McCains Hawaiin mix frozen vegetables
- 2 eggs, beaten
- 1 tsp sesame oil
- 1 tsp soya sauce
- Spring onion for garnish
Method:
- In a dry pan add the frozen vegetables and stir over low heat until defrosted.
- Push to the sides of the pan and add beaten eggs.
- Stir till cooked.
- Add the rice and mix everything till combined
- Add sesame oil and soya sauce and stir through.
