  • Can this be frozen? Yes. Pour the smoothie into freezer-safe containers, leaving a little room for expansion. Thaw it in the refrigerator and give it a good blend or shake before drinking, as the texture may separate slightly after freezing.
  • How long can it be stored and how? For the best flavour and texture, drink it immediately. If you need to store it, keep it covered in the refrigerator and use it within 24 hours. Give it a good stir or shake before serving because separation is normal.
  • Do I need to peel the apple? No. Just wash it well and remove the core and seeds. Keeping the peel adds flavour and fibre.
  • Do the litchis need their pits removed? Absolutely. Remove the peel and hard pit before adding them to the blender.
  • Can I use fresh bananas instead of semi-frozen? Yes. Add more crushed ice to get the same cold, thick texture.
  • Can I make it less thick? Yes. Add milk a little at a time until it reaches the consistency you like.

Substitutions:

  • Greek yogurt: Plain yogurt can be used, although the smoothie may be a little thinner.
  • Milk: Dairy milk can be replaced with unsweetened almond, oat, or soy milk.
  • Almonds: Cashews can be used instead.
  • Chia seeds: Ground flaxseed works well.
  • Whey powder: Leave it out if you don’t want it, or use your preferred protein powder.
  • Peaches: Nectarines are an easy swap.
  • Litchis: Lychees can be omitted or replaced with a little extra peach or mango.
  • Full cream Greek yogurt: Lower fat Greek yogurt works, but the smoothie won’t be quite as rich.

Description

Semi-frozen banana and Greek yogurt turn all that fresh fruit into a seriously creamy drink.


Ingredients

  • 2 ripe bananas, peeled and semi-frozen
  • 2 peaches, pitted and roughly chopped
  • 1 small mango, peeled and chopped
  • 1 red apple, cored and roughly chopped
  • 2 plums, pitted and roughly chopped
  • 5 litchis, peeled and pits removed
  • 5 almonds
  • 1/2 tsp chia seeds
  • 1/2 tsp cinnamon powder
  • 1 tsp whey powder
  • 1/2 cup full cream Greek yogurt
  • 1/2 cup milk
  • Crushed ice, as needed

Instructions

  1. Add 2 ripe bananas, peeled and semi-frozen, 2 pitted peaches, 1 small peeled and chopped mango, 1 cored red apple, 2 pitted plums and 5 peeled, pitted litchis to a blender.
  2. Add 5 almonds, 1/2 tsp chia seeds, 1/2 tsp cinnamon powder, 1 tsp whey powder, 1/2 cup full cream Greek yogurt and 1/2 cup milk.
  3. Add a handful of crushed ice. Blend until smooth and creamy.
  4. If the mixture is too thick for your blender, add a small splash of milk rather than loading it up with more ice.
  5. Taste before serving. The fruit should do most of the sweetening, but if your fruit isn’t particularly ripe, you may find it needs a little adjustment. Pour straight away and enjoy cold.
