Description

This Mushroom Carrot Bolognese is a great alternative to a classic meat-based Bolognese Mushroom meal, and this is vegetarian for those that prefer it that way.


Ingredients

Units Scale
  • 1 Onion
  • 1 Punnet Mushrooms
  • 23 Carrots
  • 250 ml puréed Tomatoes
  • 5 ml Tomato Paste
  • 10 ml Paprika
  • 34 Cloves Garlic (minced)
  • 5 ml Dried Thyme
  • 5 ml Dried Oregano
  • Salt & Pepper to taste
  • Pecorino Cheese
  • Oil

Instructions

  1. Slice all the vegetables to roughly the same size.
  2. Heat oil in a large pan and cook the onion and carrots till it softens.
  3. Add in the mushrooms, garlic, thyme, and Oregano (dried herbs).
  4. Cook for about 5 minutes.
  5. Add in tomatoes, tomato paste, and seasoning, and allow it to cook until the sauce has thickened.
  6. Top with freshly grated cheese, serve and enjoy!!
