This Melty Baked Brie Parcel is a simple appetizer that looks impressive and tastes even better. Leave a comment with your favourite way to serve baked Brie.
Additional Information
- Do I remove the rind from the Brie? No. Leave the rind on. It softens beautifully during baking and helps the cheese keep its shape.
- Can I make it ahead? Yes. Assemble the parcel, cover it well, and refrigerate for up to 24 hours before baking. Brush with the egg just before it goes into the oven.
- Can I serve it with anything else? Absolutely. Crackers, sliced baguette, pretzels, apple slices, pear slices, and grapes all pair wonderfully with warm Brie.
- Can I use another cheese? Brie gives the best creamy texture, but Camembert is an excellent substitute.
- How long can this be stored, and how? Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 325⁰F (160⁰C) until warmed through. Avoid microwaving if possible, as the pastry will soften.
Ingredient Substitutions
- Replace sweet chili sauce with cranberry sauce, pepper jelly, or hot honey.
- Substitute bacon bits with finely chopped cooked bacon or pancetta.
- Use Camembert instead of Brie.
- Swap Parmesan for Pecorino Romano or leave it out if preferred.

Description
If you’re looking for an easy appetizer that looks impressive without much effort, this Melty Baked Brie Parcel is a winner. Creamy Brie, crispy puff pastry, sweet chili sauce and smoky bacon come together into one irresistible centrepiece that’s always a hit.
Ingredients
- 225 g pre-rolled butter puff pastry sheet, thawed
- 340 g – 1 mini Brie cheese roll
- 37.5 – 50 ml – 3 to 4 tbsp sweet chili sauce
- 62.5 ml – 1/4 cup bacon bits
- 25 ml – 2 tbsp freshly shredded Parmesan cheese, plus extra for topping
- 1 egg, whisked
Instructions
- Preheat your oven to 350⁰F (180⁰C) and line a baking tray with the parchment paper that comes wrapped around the puff pastry.
- Gently unfold the 1 x 225 g pre-rolled butter puff pastry sheet, leaving it on the parchment paper to make moving it much easier later.
- Place the 1 x 340 g mini Brie cheese roll right in the centre of the pastry.
- Spoon 3 to 4 tbsp sweet chili sauce evenly over the top of the Brie, spreading it almost to the edges but leaving a small border so it doesn’t run out while baking.
- Sprinkle 1/4 cup bacon bits (or more if you like) generously over the sweet chili sauce.
- Add 2 tbsp freshly shredded Parmesan cheese over the bacon bits for another layer of flavour.
- Fold each corner of the pastry over the Brie, gently pressing the seams together to completely seal the cheese inside. If needed, pinch any openings closed so the melted cheese stays inside the parcel.
- Brush the entire pastry with the 1 whisked egg until evenly coated.
- Sprinkle a few extra bacon bits and a little extra freshly shredded Parmesan cheese over the top for a beautiful finish.
- Transfer the parchment paper and pastry parcel onto the prepared baking tray.
- Bake for 40 to 45 minutes, or until the pastry is puffed, crisp, and a deep golden brown.
- Let the parcel rest for 5 to 10 minutes before slicing. This gives the Brie a chance to settle slightly instead of flowing straight out.
- Serve warm with crackers, toasted baguette slices, apple slices or fresh grapes, and enjoy every gooey bite.
