Its a sugar-free “bread” pudding except it has no bread so I call it a no-bread pudding 😁 This pudding is not only low in carbs but is gluten-free as well 👌
1L milk/coconut milk/half and half
1/4 cup xylitol
1 cup dessicated coconut
1 tsp baking powder
4 low carb waffles (I used left over coconut protein waffles)
Pinch of fine cinnamon
Pinch of fine cardomom
1 Tblsp butter
1 Tblsp sukrin gold or brown sugar alternative (optional)
Tear the waffles into small pieces.
Whisk the milk, eggs and xylitol then add the waffles and coconut and leave to soak for 10 mins.
Pour into a greased baking dish.
Dot with pieces of butter then sprinkle with cinnamon, cardomom and sukrin gold.
Bake at 200 for 30 mins or until the egg custard is browned and set.
