It’s a sugar-free “bread” pudding except it has no bread so I call it a no-bread pudding π This pudding is not only low in carbs but is gluten-free as well π

Ingredients
1L milk/coconut milk/half and half
5 eggs
1/4 cup xylitol
1 cup desiccated coconut
1 tsp baking powder
4 low carb waffles (I used leftover coconut protein waffles)
Pinch of fine cinnamon
Pinch of fine cardamom
1 Tblsp butter
1 Tblsp sukrin gold or brown sugar alternative (optional)
Tear the waffles into small pieces.
Whisk the milk, eggs, and xylitol then add the waffles and coconut and leave to soak for 10 mins.
Pour into a greased baking dish.
Dot with pieces of butter then sprinkles with cinnamon, cardamom and sukrin gold.
Bake at 200 for 30 mins or until the egg custard is browned and set.
