Description

Orzo Kale Summer Salad is the perfect addition as it’s a light and simple summer salad.


Ingredients

Units Scale
  • 1 Box of Orzo
  • 1 Bunch Asparagus
  • 1 Punnet Cherry Tomatoes
  • 1 Bunch Kale
  • 1 Tub Edamame (soybeans)
  • 1/2 cup Olives
  • 1 cup Artichokes
  • Salt & Pepper
  • Oil (to drizzle)

Instructions

  1. Boil the orzo in salted water.
  2. Drain and set aside to cool.
  3. Once cooled, toss in olive/ avocado oil.
  4. Sauté the asparagus and kale in a little oil.
  5. Chop the tomatoes, artichokes, and olives and add all the vegetables to the pasta, and toss.
  6. Season and enjoy!!
