Description

Bet you didn’t think mushrooms could taste this good. Beer, asparagus, and peppers make it magic.


Ingredients

Scale
  • 1 yellow bell pepper
  • 1/2 red bell pepper
  • 4 spring onions
  • 1/2 medium onion
  • 4 oyster mushrooms
  • A good-sized clove of garlic
  • Butter or margarine
  • 1/4 to 1/2 bottle of beer
  • 1/2 bunch of asparagus
  • Salt and black pepper

Instructions

  1. Fry the garlic and butter in a pan (your kitchen is about to smell amazing).
  2. Toss in the peppers and onions, and stir-fry them until they’re just starting to soften.
  3. Feeling adventurous? Pour in a glug (or two) of beer and watch the magic happen.
  4. Add the oyster mushrooms and let them soak up that glorious beer-butter combo.
  5. Finally, mix in the steamed asparagus and cook just a bit more until everything’s flavorful.
  6. Season with salt and black pepper to taste. 

Serving Suggestions

I paired these Oyster Mushrooms with homemade meatballs, a drizzle of gravy, and a simple slice of bread. But honestly? It’s good enough to steal the spotlight all on its own.
