Ingredients
- 8 boiled potatoes, cut into 4 or 6 pieces
- 1 1/2 cups mayonnaise
- 2 boiled eggs, grated or chopped
- 1 tsp mustard
- 2 tsp condensed milk
- 1 head of broccoli, steamed until soft
- Fresh parsley, chopped
- Salt and pepper, to taste
Instructions
- In a big mixing bowl, combine 1½ cups mayonnaise, 1 tsp mustard, and 2 tsp condensed milk.
- Give it a good stir until smooth.
- Add the 8 boiled potatoes, cut up into bite-sized pieces, steamed broccoli, and 2 boiled eggs.
- Don’t worry if the potatoes are a little broken; it actually makes the salad creamier.
- Mix everything gently. If it feels dry, add a bit more mayonnaise until it reaches the consistency you prefer.
- Season with salt and pepper to taste and sprinkle chopped fresh parsley on top.
