Description

Potato and Broccoli Salad is packed with flavor and textures everyone will enjoy. It’s effortless to prepare with pantry staples. Make this creamy potato and broccoli salad tonight and enjoy a comforting side.


Ingredients

  • 8 boiled potatoes, cut into 4 or 6 pieces
  • 1 1/2 cups mayonnaise
  • 2 boiled eggs, grated or chopped
  • 1 tsp mustard
  • 2 tsp condensed milk
  • 1 head of broccoli, steamed until soft
  • Fresh parsley, chopped
  • Salt and pepper, to taste

Instructions

  1. In a big mixing bowl, combine 1½ cups mayonnaise, 1 tsp mustard, and 2 tsp condensed milk.
  2. Give it a good stir until smooth.
  3. Add the 8 boiled potatoes, cut up into bite-sized pieces, steamed broccoli, and 2 boiled eggs.
  4. Don’t worry if the potatoes are a little broken; it actually makes the salad creamier.
  5. Mix everything gently. If it feels dry, add a bit more mayonnaise until it reaches the consistency you prefer.
  6. Season with salt and pepper to taste and sprinkle chopped fresh parsley on top.
  7. Serve immediately or chill for a couple of hours; it’s tasty either way.
