Are tart cherries and sour cherries the same thing?
Tart cherries (scientific name Prunus cerasus) are also called sour cherries. They are best known as a key ingredient in desserts; most importantly, the cherry pie. However, tart cherries are also delicious in preserves, main courses, salads, side dishes, and beverages.
How do you preserve fresh sour cherries?
Place in the freezer for a couple of hours until solid, then put the frozen cherries into a container and keep frozen until needed. Freezing them in a single layer first, means they don’t freeze into a solid mass in the container making it easier later to get only the amount needed for a recipe.
