Description

Savor the authentic taste of South Africa with our delightful Buttermilk Bollas! Get going and whip up a batch of these scrumptious treats and experience a burst of flavors like never before.


Ingredients

Units Scale

Bollas

  • 3/4 cup of sugar
  • 2 eggs
  • 3/4 cup oil
  • 5 ml vanilla essence
  • 4 cups cake flour
  • 4 tsp baking powder
  • 2 cups buttermilk
  • Oil for deep frying

Syrup

  • 2 1/2 cups sugar
  • 2 cups of water

1 cup Coconut


Instructions

Bollas

  1. Whisk eggs and sugar in a bowl until light and fluffy.
  2. Add vanilla and oil and beat until creamy.
  3. In a separate bowl sift flour and baking powder twice.
  4. Add flour mixture to egg mixture.
  5. Now add the buttermilk and mix it into a soft, sticky dough.
  6. Allow resting for at least 30 minutes.
  7. Place spoonfuls of mixture in hot oil and fry until golden brown.

Syrup

  1. Mix sugar and water and allow simmering over low heat until syrupy.

Tip

  1. Dip a spoon in cold water to ensure that the dough separates from the spoon to form neatly rounded balls when dropped in oil.
  2. Place some syrup in a pan.
  3. Heat through and add Bollas.
  4. Syrup Bollas until glossy and sprinkle with coconut.

NB: Not suitable for freezing, but can be refrigerated before you dip them in the syrup.

Variation: Add two pieces of stick cinnamon and two cardamom pods while boiling the syrup.

    1. Hi Cheryl. I think that the syrup will not seep into the bollas (it will only coat it) should you decide to syrup it the next day as the bollas will be cold. I have not made this one myself, but its very much the same concept you use when you make koeksisters and you dunk them in the syrup while still hot.

      You can try this recipe with melted butter, not sure if u can omit eggs here no idea of sub
