Description

Spiced Indian Buttermilk brings a light, salty, and refreshing twist using simple ingredients. It’s quick to make and surprisingly satisfying.


Ingredients

Units Scale
  • 1/2 cup plain yogurt
  • 1/2 cup toned milk (or any milk you’ve got)
  • A pinch of roasted cumin powder
  • 1 tsp mint paste (Start with 1/2 tsp if your mint is strong)
  • A pinch of pink Himalayan salt
  • A few ice cubes
  • Optional garnish: fresh coriander leaves, pomegranate seeds

Instructions

  1. Add 1/2 cup plain yogurt and 1/2 cup toned milk into a blender.
  2. Sprinkle in a pinch of roasted cumin powder and a pinch of pink Himalayan salt.
  3. Add 1 tsp mint paste and a few ice cubes.
  4. Blend until smooth and lightly frothy.
  5. If it feels too thick, add a splash more milk and blend again.
  6. Taste and adjust salt if needed; it can fall flat without enough.
  7. Pour into a glass, garnish with fresh coriander leaves and a few pomegranate seeds if you like.
  8. Serve straight away while it’s cold.

  • Can I skip mint? You can, but it’ll lose that fresh edge.
  • Can this be frozen? Not really. It separates and loses texture once thawed.
  • How long can this be stored and how? Best fresh, but you can refrigerate up to 24 hours in a sealed jar. Stir before serving.

  • Yogurt: Use Greek yogurt, just thin it with more milk
  • Milk: dairy-free milk works fine
  • What is Toned Milk: Toned milk is a dairy product made by mixing full-cream buffalo or cow milk with skim milk (or skim milk powder) and water, reducing the fat content to roughly 3% while keeping solids-not-fat (SNF) at around 8.5%
  • Mint paste: fresh chopped mint or even dried mint in a pinch
  • Pink salt: regular salt works
