This Squish Bake Bread in a Bag is one of those clever little kitchen tricks that actually works. Everything starts right in a plastic bag, which means less mess, fewer dishes, and, honestly, a bit of fun while mixing.
Ingredients
- 3 cups all-purpose flour, divided
- 3 Tbsp white sugar
- 1 package rapid rise yeast (about 2 1/4 tsp)
- 1 cup warm water
- 3 Tbsp olive oil or vegetable oil
- 1 1/2 tsp salt
- Extra flour for kneading
- Oil or butter for greasing pans
Instructions
- Grab a large resealable plastic bag.
- Add 1 cup all-purpose flour, 3 Tbsp white sugar, and 1 package rapid-rise yeast.
- Pour in 1 cup of warm water
- Press the air out of the bag and seal it well.
- Now squish everything together with your hands until it looks like a thick batter. It might feel a bit odd, but it works.
- Set the bag on the counter for 10 minutes. You should start seeing bubbles forming in the dough.
- Open the bag and add 1 cup all-purpose flour, 3 Tbsp olive oil or vegetable oil, and 1½ tsp salt.
- Seal the bag again and squish the dough until it’s mostly smooth. It’ll thicken up quite a bit at this stage.
- Add the remaining 1 cup of all-purpose flour.
- Seal the bag and keep squishing until the dough comes together and feels soft but not overly sticky.
- Dust your counter lightly with flour and remove the dough from the bag.
- Knead it for 5 to 10 minutes until it becomes smooth and elastic. If it sticks to your hands, sprinkle a little extra flour as needed.
- Divide the dough in half for two mini loaves or keep it whole for one larger loaf.
- Place the dough into lightly greased loaf pans.
- Cover the pans with a clean kitchen towel and let the dough rise in a warm spot for about 30 minutes, or until it looks puffy and slightly doubled.
- Bake in a 375⁰F (190⁰C) oven for 25 to 30 minutes.
- The top should be golden brown, and the loaf should sound hollow when tapped.
- Let the bread rest in the pan for about 10 minutes, then move it to a rack and let it cool down before slicing, it’s just easier.
