1 cup fresh strawberry, sliced in qurater
1/2 cups granulated sugar
2 cups all purpose flour
4 tsp baking powder
1 large egg
3 cups plus tbsp milk
1/4 cup butter
Preheat oven to 180C
Rinse and drain strawberries
In a large mixing bowl,combine flour,sugar,baking powder and salt.
In another bowl whisk egg with the milk then add to dry ingredients along with melted butter. Mix lightly to combine just until ingredients are moistened. The batter will be somewhat lumpy.
Sprinkle stranberries and fold into batter. Spoon into lined muffin pan and bake in preheated oven 20 to 25 minutes.
