Description

A super delicious and wonderful main or side dish to any meal for our Feta lovers


Ingredients

Units Scale
  • 1 cup Brown Rice (cooked)
  • 1 Onion
  • 250g Mushrooms
  • 1 cup Spinach
  • 1/2 cup Corn
  • 1 cup Mixed Sweet Peppers
  • 1 tsp. Garlic Powder
  • 1 tsp. Dried Thyme
  • Salt & Pepper to taste
  • Pine Nuts (toasted)
  • Feta
  • Olive Oil

Instructions

  1. Prepare the pepper and rub both sides with olive oil, salt, and pepper.
  2. Bake at 180C for about 25 minutes.
  3. Remove from oven and set aside.
  4. Heat oil in a pan, cook all the vegetables till soft.
  5. Toss in the rice and season well.
  6. Fill the rice into the peppers and top with crumbled feta.
  7. Place under the grill for a few seconds.
  8. Top with pine nuts, serve and enjoy!!
