Description

Ingredients

Units Scale
  • 3 eggs
  • 6 1/3 oz all-purpose flour (187 grams)
  • 7 oz sweet potato (198 grams)
  • 3.5 oz fresh spinach, washed and ready (100 grams)
  • 3 oz hard cheese, your favorite kind works (85 grams)
  • 1/2 cup (minus 1 Tbsp) milk (115 ml)
  • 1/2 cup (minus 1 Tbsp) olive oil (115 ml)
  • Pinch of salt
  • 1 tsp coriander powder (5 ml)
  • 2 tsp baking powder (10 ml)

Instructions

  1. Peel the sweet potato and give it a good, coarse grate.
  2. Chop up that fresh spinach. No need to be fancy, just a rough chop will do.
  3. Grate your cheese nice and thin.
  4. In a mixing bowl, whisk together the eggs and flour until smooth.
  5. Stir in the olive oil, then the milk. It should start to look like a smooth batter.
  6. Toss in the sweet potato, spinach, and cheese, and give it a good mix.
  7. Season with a pinch of salt, coriander, and baking powder, and fold it all together.
  8. Pour the batter into a greased rectangular cake pan (about 8” x 3” works great).
  9. Bake at 250°C/480°F for 50 minutes. 
  10. Let it cool before popping it out of the pan and slicing.
