- 125 g mascarpone cheese
- 125 ml (1/2 cup) fresh cream
- Zest of 1 lemon
- 30 ml berry sugar
- 200 g crumbed biscuits (keep them a bit chunky for texture)
- 40 ml melted margarine
- 30 ml shredded coconut
Instructions
- Start by puréeing the blackberries until smooth.
- In a large mixing bowl, combine the blackberry purée, cream cheese, mascarpone, fresh cream, lemon zest, and berry sugar.
- Use a hand mixer to whip everything together until it’s silky smooth.
