Edamame Fruity Vegan Gluten-Free Salad

Ingredients

Units Scale

Salad

  • 2 cups fresh or frozen Edamame
  • 3 cups fresh spinach
  • 2 cups halved cherry tomatoes
  • 1 pint sliced strawberries
  • 2 cored and sliced apples (one red and one green)
  • 1 fresh ear of corn on the cob

Cilantro Dressing

Topping

  • 1/4 cup pine nuts or any other nuts
  • 1/4 cup craisins (dried cranberries)
  • 12 teaspoons poppy seeds
  • Crumbled or cubed Vegan Feta cheese

Instructions

  1. In the microwave steam/cook the frozen edamame according to package instructions. Set aside to cool and ready to use.
  2. How to cook corn, and make sure no ‘hair’ left when taking off the leaves.
  3. Trim the top and bottom of the corn but leave the husks on.
  4. Let it cool down properly before removing the husks.Β 
  5. Combine all salad ingredients in a large pretty salad bowl.

Cilantro Dressing

  1. Combine the cilantro, garlic, vinegar, and oil in a food processor and process until it becomes a dressing. Store it in a Mason Jar in the fridge until ready.
  2. Β Pour half of the dressing into the bowlΒ and mix well.
  3. Garnish with topping ingredients.
  4. Keep the extra dressing for a future salad.Β

Thank you Laurie, We all loved this and as I look it to a get together with friends and people we did not know, I wanted to make sure that I cover all bases not to have any issues so decided to go with GF and Vegan. Obviously you can change this to suit yourself, but this was scrumdiddlyumptious for sure.
