Ingredients
- 7 cups whole-wheat flour
- 12 tsp baking powder (yep, that’s to make it rise)
- 1 tsp sea salt
- 1 1/2 cups brown sugar
- 1 cup mixed nuts, raisins, cranberries, sunflower seeds – whatever you like
- 1 1/2 cups sunflower oil
- 2 cups muesli or granola (cranberries, almonds, oats – anything goes)
- 2 tbsp white vinegar
- 2 cups buttermilk
Instructions
- Heat your oven to 180°C (350°F).
- In a big bowl, toss all the dry ingredients together.
- Add the oil, vinegar, and buttermilk.
- Stir it really well, until no dry patches are visible.
- Spoon the mix into greased baking pans, smooth the top, and bake for about 40 minutes. It should feel firm when pressed.
- Let it cool. Slice into thick bars.
- Pop the bars onto oven racks and dry them out on low heat until crisp.

Place on oven racks and dry out at about 75C (coolest on my oven in 170F) for about 4 hours, until dry right through.
