Butter cookies, known as Brysselkex, Sablés, and Danish biscuits, are unleavened cookies consisting of butter, flour, and sugar. They are often categorized as a "crisp cookie" due to their texture, caused in part because of the quantity of butter and sugar.

Ingredients
- 500g butter
- 1 cup of sugar (250ml cup size)
- 3 eggs
- 3 tablespoons oil
- 1 teaspoon vanilla
- 5 cups flour
- 4 teaspoons baking powder
- 1/4 teaspoon bicarbonate of soda
Instructions
4 Flavors
Use a different essence.
- Orange essence with some zest.
- Chocolate chips.
- Coffee
- Oats with some coconut and cherries, honey together
You can really play around with them
Jam filling
Heat up about 3 tablespoons of apricot jam on low heat.
Keep stirring until it starts boiling.
Add a drop or 2 of red food coloring and continue to stir.
Let it boil on very low heat for a minute.
Add to baked biscuits whilst hot because it will set very quickly.

It’s probably only me that’s never quite sure on the cup size! It’s probably because I’m greedy and always thirsty that all the cups I use are 480ml! 😂 I like to make sure before attempting a recipe, because it’s likely to go horribly wrong anyway without me using the wrong quantities. Brysselkex? I never knew they were called that before! I feel sure I’ve heard of Sablés though, and of course Danish biscuits as what I tend to think of them as. I bet my mother would love these too, and I could certainly go for the choc chip version. Yum! Great recipe.
