Baked Omelette Roll

It’s beautiful, light, and a nice classy twist on the usual brunch fare, so have a go a this baked omelette roll!

Baked Omelette Roll

9 eggs
1/4 cup flour
3/4 cup milk
Salt & pepper

Add everything to a blender and blend until frothy.
Pour into a baking sheet or dish lined with parchment.
Bake at 400°F until lightly browned (about 15mins).
Top with fillings of your choice (I used cream cheese, Blackforest ham, and fresh baby spinach), and roll up.
Serve in slices.

It’s beautiful, light, and a nice classy twist on the usual brunch fare.
We served it with hashbrowns and bacon.
A real hit!
