Description

An easy, moist, tasty, and well-loved treat. You can enjoy it with tea or coffee, as a quick on-the-go breakfast, or whenever you feel like something to tie you over!


Ingredients

Units Scale
  • 125 g Stork Bake or Butter
  • 250 ml castor sugar
  • 2 eggs
  • 4 ripe bananas, mashed
  • 5 ml vanilla essence / extract
  • 500 ml Cake Flour
  • 5 ml bicarbonate soda
  • 5 ml Baking Powder
  • 5ml Mixed spice
  • 125 ml hot water

Instructions

  1. Preheat your oven to 180C / 350F
  2. Cream butter & sugar until light & creamy
  3. Add eggs one at a time, beating well after each addition.
  4. Stir in Vanilla extract, and mashed bananas, add flour, baking powder, & mixed spice followed by bicarbonate soda dissolved in hot water.
  5. Mix until well combined.
  6. Spoon into paper cupcake liners and bake them for 20 minutes or until a cake tester inserted in the middle comes out clean
  7. Add chopped nuts, like walnuts or pecan nuts just before popping them in the oven.
  8. Makes about 22 regular-size muffins.
