The National Coconut Day is a holiday that falls on June 26 and is a day when you can enjoy coconuts in all their different forms. You can cook with coconut oil, make coconut cream pie, or simply make a refreshing pina colada, the most famous coconut-based drink.

Do not confuse this National Coconut Day with World Coconut Day, which falls on September 2.

The coconut tree is a member of the palm tree family (Arecaceae) and the only living species of the genus Cocos. The term “coconut” can refer to the whole coconut palm, the seed, or the fruit, which botanically is a drupe, not a nut. The name comes from the old Portuguese word coco, meaning “head” or “skull”, after the three indentations on the coconut shell that resemble facial features. They are ubiquitous in coastal tropical regions and are a cultural icon of the tropics.

Description

This Blueberry Coconut Bundt Cake is delicious and oh so moist. It will your new favorite soon and it’s an outstanding combination!

Instructions

  1. Whisk all the ingredients together until light and airy.
  2. Combine all the dry ingredients in a bowl.
  3. Whisk the eggs, sugar, and oil together.
  4. Pour in the vanilla and yogurt then mix well.
  5. Add the dry ingredients and blueberries to the wet ingredients and stir well.
  6. Pour into a greased Bundt pan and bake at 180 for 35-40 minutes.
  7. Allow cooling completely.
  8. Spread the frosting on and decorate.
  9. Enjoy!!

    1. Sim, I hope you will have a go at this one and try it out. Make sure you use unsweetened coconut and maybe use a bit less and substitute that with something else for the consistency. Enjoy
