Approved Flax Meal Low Carb Flatbread

I found this Flax Meal Low Carb Flatbread recipe while looking for low-carb pizza dough.

It worked well as a pizza base, but we liked it so much that I have made it several times as a flatbread. I vary the thickness depending on how we plan to use it. Today, it served as a focaccia-like side.

Ingredients

Units Scale
  • 1 1/2 cups flax meal
  • 2 tsp baking powder
  • 1 tbsp sugar (I use Lakanto sugar-free sweetener)
  • 1/2 tsp salt
  • 1 1/2 tsp oregano (I left this out today, but often use herbs in this recipe)
  • 3 tbsp olive oil
  • 3 eggs
  • 1/2 cup water

Instructions

  1. Preheat oven to 425°F and line a baking sheet with parchment.
  2. Then simply whisk together the dry ingredients, add the wet, and whisk again.
  3. Let it stand for a few minutes to absorb and thicken.
  4. Then spread onto the baking sheet to the desired thickness.
Today I poked holes in to mimic focaccia, then topped with coarse salt, olive oil, and parsley.
Bake 18-20 minutes for the pizza base, or a bit longer for bread (because pizza will go back in the oven a second time after toppings are added).

Flaxseed meal

You can purchase packaged ground flaxseed, called flaxseed meal. Flaxseed meal can be used in a variety of ways. Flaxseed meal can be sprinkled onto yogurt, hot and cold cereals, hummus, or ice cream. Added to milkshakes, or juices, it makes a flavourful and nutritious snack.

Is flax meal and flaxseed meal the same thing?

Milled or ground flaxseed is the same thing as flax meal. Buy either brown or golden flaxseed. Golden flaxseed is easier on the eyes, but brown flaxseed is easier to find in most supermarkets. There is very little difference nutritionally between the two, so the choice is up to you.

What’s A Good Flax Seed Substitute?

  • Your best bet: Chia seedsChia seeds have many properties in common with flax seeds including the fact that they are both high in soluble fiber.
  • A decent second choice is hemp seeds. Hemp seeds come from the same family as cannabis and are highly nutritious. 
  • In a pinch: Wheat germ.
