Easy Vegan Biryani Cooked In a Microwave Oven –  How to Make a Vegan Biryani


Ingredients

Units Scale

Vegetables

  • 1 potato – cut into 1/2” pieces
  • 1/2 of a small cauliflower – cut into florets
  • 2 carrots – cut into 1/2” pieces
  • 1 cup green peas
  • 1 tomato cut into 8 pieces
  • 23 green chilies – cut into thin strips
  • 1 tbsp mint leaves
  • 1 tsp lemon juice

Spice Bag

  • 10 whole peppercorns
  • 2 tsp fennel seeds
  • 34 green cardamoms
  • 34 black cardamoms
  • 4 cloves
  • 2 sticks cinnamon

Biryani

  • 1 cup long-grained fragrant rice- washed and soaked
  • 5 tbsp oil
  • 1 tsp ginger paste
  • 1/2 tsp garlic paste
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1 1/2 tsp salt or to taste

Instructions

  1. In a broad microwave-proof dish, pour oil, ginger, garlic, cauliflower, potato, carrots, and peas.
  2. Microwave for 4 mins.
  3. Drain the soaked rice.
  4. Add rice, 2 cups of water, turmeric powder, red chili powder, and salt.
  5. Add the spice bag. Microwave covered for 6 mins.
  6. Add tomatoes, mint, coriander, green chilies and lemon juice.
  7. Stir gently with a fork. Cover and microwave for 8-10 mins.
  8. Wait for 5 mins  Fluff with a fork and serve.
