Moroccan Beef Harira Soup

A warm comforting bowl of Moroccan Beef Harira Soup which is a Tomato Soup with Chickpeas and Lentils. Perfect winter warmer meal which I served with a robust sourdough.

What is Harira

Harira is a traditional North African soup prepared in Morocco and Algeria. It is popular as a starter but is also eaten on its own as a light snack. There are many variations and it is mostly served during Ramadan, although it can be made throughout the year.

It is also part of the Maghrebi cuisine, where lemon juice and egg are added to brighten the flavors of the soup. Like Muslims, who traditionally have the filling soup for Iftar meals, Jews break their fast with it during Yom Kippur.

Tadouira is a thickening mixture made from flour and water and sometimes canned tomato paste, which is added at the end of the cooking process.

Description

A warm comforting bowl of Beef Harira which is a Moroccan Tomato Soup with Chickpeas and Lentils. Perfect winter warmer meal which I served with a robust sourdough.


Ingredients

Units Scale
  • 1kg Beef (cut into pieces)
  • 68 Baby Carrots (diced)
  • 1 Stalk Celery (diced)
  • 1 Large Onion (chopped)
  • 1 Teaspoon Ground Cinnamon
  • 1 Teaspoon Ginger (grated)
  • 1 Teaspoon Garlic (grated)
  • 1 Teaspoon Paprika
  • 24 cups Beef Stock/Broth
  • 1/4 cup Brown Lentils
  • 1 Can Chickpeas (drained)
  • 6 Tomatoes (diced)
  • Salt to taste
  • Oil (browning)

Tadouira

  • 1/2 cup Chickpea Flour
  • 1 cup of Cold Water
  • 1 Tablespoon Tomato Paste

Instructions

  1. Heat oil and brown meat in batches.
  2. In the same pot, add onion, celery, and spices.
  3. Allow it to cook for a few minutes then add the beef, lentils, and stock to the pot.
  4. Cook till meat and lentils are tender (add more stock if necessary as it cooks).
  5. Once the meat is tender, add the carrots and tomatoes and cook till the vegetables have softened.
  6. Mix all the ingredients, chickpea flour water, and tomato paste for the tadouira together then pour into the soup, add the chickpeas and allow it to simmer for about 5 minutes until the soup has thickened. ste
  7. Serve with a squeeze of lemon juice and enjoy!!
