Passion Fruit Cake

Only a handful of the ingredients and yet you will get this simply mixed in one bowl to create the cake batter for an outstanding Passion Fruit Cake. 

Passiflora edulis, commonly known as passion fruit, is a vine species of passion flower native to southern Brazil through Paraguay and northern Argentina. It is cultivated commercially in tropical and subtropical areas for its sweet, seedy fruit.

Description

We (Jennifer) have lovely fresh Passion fruit in the garden, so I tried a passion fruit cake, wow it’s so delicious.


Ingredients

Units Scale
  • 125 g margarine
  • 1 3/4 cup self-raising flour
  • Pinch salt
  • 3/4 cup castor sugar
  • 1 tsp vanilla essence
  • 2 eggs
  • 100g fresh passion fruit pulp
  • 1/2 cup icing sugar
  • 4 Passion Fruit for the Pulp (depending on the size)

Instructions

  1. Beat together margarine and sugar.
  2. Add eggs and vanilla essence, and mix well.
  3. Sift in flour, and add the salt.
  4. Mix well and then add the passion fruit pulp.
  5. I added chopped cherries as well.
  6. Mix well, place in a greased tray, I used a loaf tin.
  7. Bake at 180C / 350F for 25 to 30 minutes.
  8. Use a toothpick to poke through to check if it’s done.

For the syrup

  1. Mix 1/2 cup icing sugar with a few tablespoons of orange and passion fruit juice.
  2. Mix until you have a thick liquid.
  3. Pour over cooled cake.
