Description

Peanut Butter Cookies with oats make a simple treat anyone can bake.


Ingredients

Scale
  • 1/2 cup chunky peanut butter (smooth works too—that’s what I used!)
  • 1/2 cup Demerara sugar
  • 1 extra-large egg
  • 1 1/4 cups steel-cut oats
  • 3/4 teaspoon baking soda

Instructions

  1. Set your oven to 350°F/180°C and line a baking sheet with parchment paper.
  2. In a bowl, beat the peanut butter and sugar with a hand mixer until it looks light and fluffy.
  3. Add the egg and mix again.
  4. Stir in the oats and baking soda.
  5. The dough will feel crumbly; use your hands to knead it into a solid ball. It will come together.
  6. Roll the dough into 2-inch balls and flatten them right on the baking sheet.
  7. Bake for 8–10 minutes, until the edges start to brown.
  8. Let them cool on a wire rack.
  9. Once cool, keep them in an airtight container, if they last that long.

These are chewy, nutty, and insanely good straight from the oven.
