Stuffed Roti/Gobi Paratha

Ingredients
- 1 Head of Cauliflower
- 1 Onion (finely chopped)
- 2 Teaspoons Cumin Powder
- 2 Teaspoons Coriander Powder
- 1 Teaspoon garam masala
- Masala/Chili Powder (to your heat level)
- 1 Teaspoon Whole Cumin Seeds
- Chopped Green Chilies (to your heat level)
- Chopped Coriander/Dhania
- Salt to taste
- Oil (about 4-5 tablespoons)
Instructions
- Chop cauliflower into pieces, then boil till fork tender. Drain and set aside.
- The whole seeds and onion should be cooked until translucent in a pan.
- Add all the spices and allow this to cook for a few minutes.
- Add the boiled cauliflower to the pan along with salt and stir to coat well.
- Let this simmer for about 5 minutes, then turn off the heat and allow it to cool completely.
- Once cooled, use a fork and mash the cauliflower, add chilies and coriander, and mix.
- The filling is now ready. Enjoy!!

- Use a ball of dough about a golf ball size, flatten it out with your fingertips, place a tablespoon of filling in the center then pull up the sides of the dough to create a ball.
- Flatten and roll out gently on a lightly floured surface, then cook in a nonstick pan/Tawa till puffy and browned on both sides.
