The best-ever breakfast spoils were Sweet Potato Blinis with Sour Cream (Russian sweet potato blinis – small pancakes) topped with scallion sour cream.
A blini or, sometimes, blin, is a Russian pancake traditionally made from wheat or buckwheat flour and served with smetana, tvorog, butter, caviar, and other garnishes. Blini are among the most popular and most eaten dishes in Russia.

Description
Breakfast spoils were Russian sweet potato blinis (small pancakes) topped with scallion sour cream.
Ingredients
- 2 Large Sweet Potatoes
- 1 Tbsp. Honey/Sugar
- 200g Butter (softened)
- 1 cup Milk
- 2 Eggs (beaten)
- 2 cups Flour
- 2 tsp. Baking Powder
- 1 tsp. Paprika
- Salt & Pepper to taste
- Sour Cream
- Chopped Scallions/Spring Onions
Instructions
- Peel and chop the potatoes then boil until tender.
- Drain, add the honey/sugar and butter, and mash until smooth.
- Whisk the milk and eggs together and stir into the sweet potato puree.
- In another bowl, stir together the dry ingredients then add them to the sweet potatoes.
- Stir until blended.
- Heat a non-stick skillet/pan and add in a spoonful of the batter, flattening each pancake slightly.
- Cook until golden on each side.
- Garnish the pancakes with a dollop of sour cream and enjoy!!

What are blinis made of?
Blinis are yeasted pancakes, traditionally from Russia, and made from buckwheat flour and served with caviar. Make up a batch of these blinis for a party – if the recipe gives you too many you can freeze them. Delicious served with smoked salmon and soured cream, or maybe a spot of caviar.
Are blinis served warm or cold?
